Jack began Crescent Moon Organic Farm in Sopchoppy, Florida, in June 2004 after 25 years as a charter sailing captain in the Virgin Islands. What began as a 500 square foot garden has now grown to over three acres. Currently, Crescent Moon sells its produce at two farmers' markets and to four restaurants in Tallahassee and Apalachicola, FL, as well as in Birmingham, Alabama. With the help of dedicated volunteers and WWOOFers, the farm is able to provide wholesome, quality produce to Sopchoppy and neighboring communites.

Cresent Moon is also involved in Community Supported Agriculture (CSA), which is based on the concept of a community sharing the bounty and the burden of farming with farmers. CSA programs help enable growers to provide for communities around them while providing community members an opportunity to help support small farmers. Each week Jack and volunteers prepare bags of their freshest produce and have them available for pick-up at market. By having this guaranteed community support Crescent Moon is able to subsist through hard times (i.e. freezes).

Throughout the year Crescent Moon grows tomatoes, broccoli, brussel sprouts, onions, radishes, arugula, eggplant, kale, chard, carrots, beets, cabbage, rutabaga, elephant garlic, leeks, lettuce, red mustard, spinach, okra, cucumber, winter squash, summer squash, red potatoes, sweet potatoes, pumpkins, sweet peas, eggplant, muscodine grapes, blackberries, raspberries, blueberries, pomegranate, citrus and plums. Herbs grown at the farm include chives, rosemary, mint, parsley, basil,  purple basil, and dill  Sprouts include lentil, mung, sunflower & buckwheat.  Also, figs, peaches, pears, bell peppers, cayenne peppers, sweet peppers.
